Step 1

Heat oil in a large skillet over medium heat; add asparagus, onion and bell pepper and cook, stirring frequently, until crisp-tender, about 10 minutes.

Step 2

Beat eggs well with seasonings and let stand a few minutes.

Step 3

Flatten vegetable mixture; pour egg mixture over, sprinkle with cheese, cover pan and continue cooking until eggs are set, about 10 more minutes.

I added mushrooms and cooked the frittata in the oven. Used thyme instead of basil because I still have fresh thyme. It was very delicious...I had to restrain myself from going back for more. :)
