  • 1/2 red bell pepper, cut into thin slices
  • 6 eggs, large
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • Italian-Romano seasoning blend (1 teaspoon)
  • 1/2 cup cheddar cheese, shredded

How to Make

  • Step 1: Heat oil in a large skillet over medium heat; add asparagus, onion and bell pepper and cook, stirring frequently, until crisp-tender, about 10 minutes.

  • Step 3: Flatten vegetable mixture; pour egg mixture over, sprinkle with cheese, cover pan and continue cooking until eggs are set, about 10 more minutes.
