"Easy and quick to prepare. This uses a packaged slaw mix, and leftover chicken; which makes this ... a quick, delicious, lunch or dinner all wrapped up in a tortilla. Serve warm; or, make the filling and let it cool before you make the wraps, and this makes a fantastic sandwich to take to work, school, picnics, and on the go. And, it is pretty healthy as well which is important these days. At our Farmers Market, there is a stand which has a recipe swap, and this is where I found this great recipe. A few years ago, I used to make my own broccoli slaw, but these days - it is available already packaged; and, it is a great alternative to a cabbage slaw. I used to take these to work for lunch; and to the beach all the time. You can also cut them in 2-3 pieces and wrap individually, for a nice snack."

Step by Step Method
Step 1
Broccoli and Chicken ... Heat a medium saute pan (non-stick is preferred) to medium high heat, and add the oil. Then, add the broccoli, onion, and ginger and cook 3-4 minutes stirring often until the vegetables are crisp tender. Add the chicken in, and cook just another minute or two to heat up. Transfer to a bowl and cover with plastic wrap or foil to keep warm.
Step 2
Sauce ... Wipe that same pan with a paper towel and add the peanut butter, water, soy sauce, garlic and remaining ginger and bring to a light boil. Then reduce to a low heat for 2-3 minutes until heated through and the sauce is thickened and smooth. Make sure to whisk it often.
Step 3
Wraps ... Tortillas can be a bit dry; and, if you try to stuff them as is ... they can tear. Wrap the tortillas in a damp paper towel and microwave for 5-10 seconds on medium heat - just enough to warm them up, they will not break.
Step 4
Then, spread the sauce over the tortilla and top with the chicken and slaw mixture. Top with the chopped peanuts and wrap just like a burrito. Fold the bottom over the filling, then fold in the two sides and then roll. You can secure the roll with a toothpick.
Step 5
Serve ... These are fantastic served warm; but, equally as good chilled. You can cut in half for lunch; or, cut in 2 or 3 pieces as a snack or appetizer. ENJOY!
