Ingredients

The ingredients are:
  • 4 (10 inch) whole wheat or plain tortillas
  • 1 1/2 pounds (1 1/2 to 2 cups) cooked chicken, diced
  • 2 1/4 cups broccoli slaw
  • 1 small onion, cut in half and sliced
  • 4 tablespoons peanuts, chopped
  • 1/4 teaspoon ground ginger
  • Pinch salt and pepper
  • 1 teaspoon olive oil
  • Sauce:
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons water
  • 1 tablespoon reduced-sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon minced garlic

How to Make

  • Step 1: Broccoli and Chicken ... Heat a medium saute pan (non-stick is preferred) to medium high heat, and add the oil. Then, add the broccoli, onion, and ginger and cook 3-4 minutes stirring often until the vegetables are crisp tender. Add the chicken in, and cook just another minute or two to heat up. Transfer to a bowl and cover with plastic wrap or foil to keep warm.

  • Step 2: Sauce ... Wipe that same pan with a paper towel and add the peanut butter, water, soy sauce, garlic and remaining ginger and bring to a light boil. Then reduce to a low heat for 2-3 minutes until heated through and the sauce is thickened and smooth. Make sure to whisk it often.

  • Step 3: Wraps ... Tortillas can be a bit dry; and, if you try to stuff them as is ... they can tear. Wrap the tortillas in a damp paper towel and microwave for 5-10 seconds on medium heat - just enough to warm them up, they will not break.

  • Step 4: Then, spread the sauce over the tortilla and top with the chicken and slaw mixture. Top with the chopped peanuts and wrap just like a burrito. Fold the bottom over the filling, then fold in the two sides and then roll. You can secure the roll with a toothpick.

  • Step 5: Serve ... These are fantastic served warm; but, equally as good chilled. You can cut in half for lunch; or, cut in 2 or 3 pieces as a snack or appetizer. ENJOY!
