Step by Step Method
Step 1
Heat lightly oiled cast iron or other heavy skillet over medium high heat

Grill Apricots, cut side down until slightly softened

Flip and continue cooking until they are just beginning to soften

Place on a platter and add a small spoonful of goat cheese in each apricot
Step 5
Drizzle with honey

Decorate each with a small mint leaf
