Step 1: Heat lightly oiled cast iron or other heavy skillet over medium high heat
Step 2: Grill Apricots, cut side down until slightly softened
Step 3: Flip and continue cooking until they are just beginning to soften
Step 4: Place on a platter and add a small spoonful of goat cheese in each apricot
Step 5: Drizzle with honey
Step 6: Decorate each with a small mint leaf
Step 7: Serve
