  • 4 ounces goat cheese (soft)
  • 2 tablespoons honey
  • 8 peppermint leaves (tiny fresh leaves)

How to Make

  • Step 1: Heat lightly oiled cast iron or other heavy skillet over medium high heat

  • Step 2: Grill Apricots, cut side down until slightly softened

  • Step 3: Flip and continue cooking until they are just beginning to soften

  • Step 4: Place on a platter and add a small spoonful of goat cheese in each apricot

  • Step 5: Drizzle with honey

  • Step 6: Decorate each with a small mint leaf

  • Step 7: Serve
