Step by Step Method
Step 1
Bring a large pot of water to a boil. Add 2 teaspoons of salt to water, then add the green beans, and cook until just tender 3 to 4 minutes. Drain and plunge into cold water to stop the cooking process (you may need to heat them in the microwave if you want them hot).
Step 2
Meanwhile, cook the bacon in a medium skillet over medium heat until crisp, about 5 minutes. Add the garlic and shallot, and cook, stirring occasionally, until the garlic begins to brown, about 2 minutes.
Step 3
Stir in the apricot jam with vinegar, and 1/4 tsp each salt and black pepper. Add the green beans and toss to coat. Fold in the bacon. Serve warm.
