Applesauce Cake

Step by Step Method
Step 1
Grease and flour a 9x13 in. pan or use baking spray. Preheat oven to 350ºF.
Step 2
Beat together softened butter, sugar and eggs until light and fluffy.
Step 3
Add applesauce and beat until combined.
Step 4
In a medium bowl, mix together the 3 cups flour, baking soda and powder and spices.
Step 5
Add to the applesauce mixture and beat on low until combined.
Step 6
Put walnuts, raisins and 1 tablespoon into the empty bowl, and toss to combine.
Step 7
Add to batter and fold in with a rubber spatula.
Step 8
Pour batter into prepared pan.
Step 9
Bake on center rack of oven for 35-40 minutes, until toothpick comes out clean.
Step 10
Cool on wire rack.
Step 11
NOTE to SERVE: can top with powdered sugar, caramel frosting, rum sauce or as is.
