Step by Step Method

Step 1

Preheat the oven to 180C/160C fan forced.

Step 2

Melt 25 grams butter in a large, deep frying pan over medium heat and add the apple, golden syrup, 1 tablespoon of sugar and a pinch of salt and cook, stirring occasionally, for 4-5 minutes or until apples are just tender.

Step 3

Place the cornflour in a small jug and add water and stir until smooth and then add cornflour mixture and cinnamon to apple mixture and stir to combine and cook for 1 minute or until mixture thickens and coats the apples and now spoon into a 4.5cm-deep x 24cm round ovenproof dish.

Step 4

To make the dumplings, combine flour, sugar and a pinch of salt in a bowl and add milk, butter and egg and stir until combined.

Step 5

Melt remaining butter in a small saucepan over low heat and top apple mixture with tablespoonfuls of the dumpling mixture and sprinkle with remaining sugar. Drizzle the melted butter over the top and place pie dish on a baking tray and bake for 30 minutes or until the dumpling top is golden brown and drizzle over custard (if using) to serve.
