Step by Step Method

Step 1

Heat oil in a heavy skillet to medium high heat. (use enough oil to deep-fry)

Step 2

Toss the apple cubes with lemon juice.

Step 3

In a large bowl combine the pancake mix with nutmeg and cinnamon. Mix in apple juice until blended. Mix in apple cubes.

Step 4

Drop by heaping tablespoonfuls into hot oil. Fry for about 1 minute, until evenly golden brown. Transfer to paper bag or towels to drain.

Step 5

Top fritters with confectioners' sugar.

I have had corn fritters but not apple. I used Macintosh apples right off the tree to make these. The apples were somewhat tart and they came out great. I made an apple salsa to serve with them and I enjoyed them so much! I cut the recipe in half so there wouldn't be too much for me and I wish I had made the whole batch, because these are delish!
