Ingredients

The ingredients are:
  • 4 apples, peeled and diced into 1/2 inch cubes
  • 2 teaspoons lemon juice (1 wedge will do)
  • 2 cups pancake mix, any brand (Aunt Jemima is the best flavor, use the just add water kind)
  • 2 teaspoos ground nutmeg
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups apple juice
  • Oil, for deep-frying
  • Confectioners' sugar

How to Make

  • Step 1: Heat oil in a heavy skillet to medium high heat. (use enough oil to deep-fry)

  • Step 2: Toss the apple cubes with lemon juice.

  • Step 3: In a large bowl combine the pancake mix with nutmeg and cinnamon. Mix in apple juice until blended. Mix in apple cubes.

  • Step 4: Drop by heaping tablespoonfuls into hot oil. Fry for about 1 minute, until evenly golden brown. Transfer to paper bag or towels to drain.

  • Step 5: Top fritters with confectioners' sugar.
