"Found this recipe in a stash of recipes cut out from magazines and from boxes - this one came from a cake recipe and I written very nice but not the date but I know it is prior to going metric as it was in imperial. Note mixed spice is a blend of cinnamon, nutmeg, all spice and ginger."

Step by Step Method

Step 1

For the crumb topping - whisk together the butter, granulated sugar, brown sugar, mixed spice mix and salt and add the self raising flour and stir with a wooden spoon until dough like and set aside in the fridge to cool for 20 minutes (this an important step as it allows the butter to solidify and will give you a better end product).

Step 2

When cool, use your fingers to break apart the mixture into large pea sized crumbs and put back into the refrigerator until ready to use.

Step 3

For the sauteed apples - heat a small saucepan over medium heat and add the butter and heat until melted and then add the apples, brown sugar, mixed spice and salt and saute until the apples are slightly browned and al dente, about 10 minutes and then set aside to cool.

Step 4

For the cake - Preheat the oven to 350F and spray a 9" x 13" baking dish with cooking spray and using 2 sheets of baking paper create an overlapping cross in the pan to creadle the cake and make it easy to remove one backed.

Step 5

Prepare cake batter according to the instructions on the box and then add the cake batter to the prepared baking dish, then scatter in a layer of the cooled apples, pushing some down into the batter.

Step 6

Bake for about 20 minutes, then remove the baking dish and carefully spread the crumb topping into an even layer over the cake and bake until the crumbs are golden and a cake tester comes out clean, should take 10 to 20 minutes.

Step 7

Cool on a wire rack for 40 minutes and once cooled, lift out of the pan using the parchment cradle and dust with confectioners sugar before serving.
