Step by Step Method

Step 1

In a large bowl, using an electric hand mixer, beat the eggs well. Gradually add the flour, alternating with the milk, until mixture is smooth. Mix in the melted margarine, salt and the vanilla. Stir in the grated apple pieces.

Step 2

Add a small amount of shortening to the frying pan. Pour about 2/3 cup into a cast iron fying pan, fry on the first side, then flip over and complete frying on the other side, until golden brown. Transfer pancake to a plate in a warm oven, until all pancakes are fried.

Step 3

Roll up pancake. Serve warm with sugar, jam or maple syrup.

Yum so good with the apples! Might try other fruits too. I am thinking blueberries, strawberries and nectarines. Can't wait to experiment!

These crepes were a tremendous hit with my wife and I. We tried another recipe for Swedish crepes on here and when we saw them with the apple we had to try them. They are delicious with the addition of the apple. A regular for us now to have for breakfast.
