Step 1: In a large bowl, using an electric hand mixer, beat the eggs well. Gradually add the flour, alternating with the milk, until mixture is smooth. Mix in the melted margarine, salt and the vanilla. Stir in the grated apple pieces.
Step 2: Add a small amount of shortening to the frying pan. Pour about 2/3 cup into a cast iron fying pan, fry on the first side, then flip over and complete frying on the other side, until golden brown. Transfer pancake to a plate in a warm oven, until all pancakes are fried.
Step 3: Roll up pancake. Serve warm with sugar, jam or maple syrup.
