"This is a recipe that I used to make all the time when the children were younger. It is an old family recipe and although everyone bakes their own versions of this recipe here, they always taste so good. I have made this with great success using a gluten free cake mix pack."

Step by Step Method
Step 1
Preheat the oven to 180°c & grease a 20cm square cake pan; line the pan base & the two opposite sides with baking paper, extending the paper 5cm over edge of pan, for lifting later.
Step 2
Combine the cake mix, coconut and butter in a medium bowl and press the mixture evenly over base of prepared pan.
Step 3
Place in oven and cook for 15 minutes, or until lightly browned; set aside to cool slightly.
Step 4
While waiting whisk together the sour cream and egg.
Step 5
Spread the apple evenly over base, then spread sour cream /egg mixed together evenly over apple and sprinkle with cinnamon sugar.
Step 6
Cook for further 20 minutes, or until sour cream has set.
Step 7
Cool the slice in the pan.
Step 8
Cut the slice into fingers to serve.
