"I think the first time I was exposed to claflouti it was in a food magazine. It is a French breakfast or dessert that can be made with many different fruits. I discovered in researching to post this that technically to be called a claflouti (or clafloutis) it should be made with cherries. All other fruits are a flaugnard. This particular recipe is from another food website."

Step by Step Method

Step 1

Combine flour, salt, eggs, vanilla, milk and cold water in a bowl, beat until smooth.

Step 2

Peel, core and thinly slice apples.

Step 3

Add the apples and sugar to the batter, you can use less sugar if your apples are sweet.

Step 4

Put the batter in the refrigerator at least 1/2 hour.

Step 5

You can leave the batter overnight cover tightly in the refrigerator.

Step 6

If the batter is to thick add cold water to thin the batter out.

Step 7

Heat oven to 450F degrees.

Step 8

Place 1-2 tablespoons butter in a 9-inch deep pie plate or a cast iron pan.

Step 9

Place the pie plate/an in the oven for 5 minutes until very hot. (You can put it in while it's still preheating.)

Step 10

Leaving the pan in the oven, carefully pull out the rack and pour the batter over the hot butter in the pan.

Step 11

Push back the shelf, close oven door as soon as possible.

Step 12

Bake for 30 to 40 minutes or until golden brown.

Variations: Use sliced peaches (drain well or substitute the water for the juice) or whole or halved cherries. For peaches or cherries, substitute almond extract for the vanilla. Any other fruits/extracts can be attempted- feel free to experiment! You can get away with quite a bit a fruit in this... minimum of two cups
