Step 1: Preheat your oven to 350 degrees. (Oven rack positioned to middle).
Step 2: Spray a large cookie sheet with vegetable cooking spray.
Step 3: In your bowl of your electric mixer, cream butter for 30 seconds. Add in both brown sugars and white sugar; beat 1-2 minutes. Add in egg, peanut butter and vanilla; beat 2 minutes.
Step 4: In a medium bowl combine flour with baking soda and cinnamon; add to bowl and mix until well combined. Then mix in nuts and oats.
Step 5: Drop by heaping tablespoons on cookie sheet.
Step 6: Bake 9-10 minutes until golden brown around the edges (9-10 for crispier cookies, bake less time for softer chewy cookie).
Step 7: Cool on the cookie sheet then move to a cookie rack.
