Ingredients

The ingredients are:
  • 1 cup margarine (room temperature, or butter)
  • 1 cup granulated sugar (white)
  • 1/2 cup light brown sugar, packed
  • 1/2 cup dark brown sugar, packed
  • 1 large egg (or extra large)
  • 3 tablespoons smooth peanut butter
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup ground salted mixed nuts (they should be in between coarsely ground and fine ground, click onto my photo to enlarge so you can see the ground nut size)
  • 1 1/2 cups oats (use a heaping 1 1/2 cup quick-cooking)

How to Make

  • Step 1: Preheat your oven to 350 degrees. (Oven rack positioned to middle).

  • Step 2: Spray a large cookie sheet with vegetable cooking spray.

  • Step 3: In your bowl of your electric mixer, cream butter for 30 seconds. Add in both brown sugars and white sugar; beat 1-2 minutes. Add in egg, peanut butter and vanilla; beat 2 minutes.

  • Step 4: In a medium bowl combine flour with baking soda and cinnamon; add to bowl and mix until well combined. Then mix in nuts and oats.

  • Step 5: Drop by heaping tablespoons on cookie sheet.

  • Step 6: Bake 9-10 minutes until golden brown around the edges (9-10 for crispier cookies, bake less time for softer chewy cookie).

  • Step 7: Cool on the cookie sheet then move to a cookie rack.
