Band Camp, Beach, Travelin' Food :D

Hello Everyone!
Spring just got here, but Summer is next. That means Band Camp food! Food that will need minimal prep to be ready to eat, can safely remain in a cooler for hours, not too messy.
Think of other camping food or food you take to the beach or on vacation.
Thanks so much for your suggestions! I'm anxious for them! :D

Done this many times - camping and horseback riding for a weekend. Heading to our lake watersking for the weekend; or traveling to our friends mountain cabin, and I cater many beach parties ... so, I got tons.

A couple of quick questions to narrow it down.
First, is it overnight, or just that day/night. Will you be cooking over a fire, stove or microwave; or just food right from the cooler? Do you want just hand held food; or paper plates and forks/knives, etc.?

Example, soup in paper cups; grilled veggies or chicken in foil packets; or looking for salads, sandwiches all ready to just grab and eat.

It's pretty tough to come up with recipes that do not require any refrigeration in the summer, cooler is only good for a few hours, I will try to think of something for you

Also, cole slaw with a vinegar based dressing (no mayo).

Kcchurchill, you ask great questions! Really! High school band camp, 8A to 8P. No micros, no refrig, just cooler. Utensils, but not much prep once there. Handheld most likely, but not exclusively.

I love cold BBQ or not BBQ chicken. Always good; especially if you do drumsticks or wings. You could add some dip too.

Lovin's cucumber corn salad is really good; and, a good choice.
I love stuffed celery; you can use a cream cheese, pimento cheese; or even peanut butter. It's easy snack food.

I also love mini muffins; they are easy to make; and, you can make a variety in case someone doesn't like apple, carrot, or whatever.

I like WRAPS. You can do turkey, roast beef, ham; add cheese, a little dressing; and roll up. They can be wrapped in parchment and foil; then, just cut in half. I make those often when I go offshore fishing. They hold up well; and, easy to make.

FAVORITE ... Chicken caesar is a really good salad; and, you can add pasta too it. Simply use your favorite dressing. Add the cooked pene on the bottom of a tupperware or bowl. Top with romaine and any other veggies. Sometimes I will add the tomatoes or eggs in a small baggie. Then topped with grilled chicken and cheese. Add the dressing to a small baggie or mason jar. Then, just add the dressing and toss when it's time to eat. NO other prep.

Macaroni salad with tunafish (using the old classic recipe with elbow noodles). You could even make one with chicken too.

You could make mini cups of bean dip with dips. QueenBea just posted one in plastic cups; but, they also make small cups at party stores with lids.
You could add a bean and beef mix, cheese, sour cream, guac, tomato; and serve with a bag of chips.

Cold mini meatloaf sliders. Meatloaf on a small dinner roll. Add a little cheese, lettuce and mustard. And, make a plain meatloaf, so if the kids are picky they won't care. And, add the mustard on the side if you want. Just add them in a paper towel or parchment lined container. DON't add any condiment yet; and wrap up.

You can do this with grilled sliced chicken too. Add cheese lettuce; and, let the kids add their own condiment. Doesn't have to be cold. Just marinate the chicken breasts in an Italian vinaigrette ... Then, grill, cool, and slice. Dinner rolls are perfect size.
