Step by Step Method

Step 1

In a large bowl beat eggs till thick and lemon-colored; gradually beat in sugar.

Step 2

Stir in oil, 2/3 cup orange, and zucchini until well-blended.

Step 3

Add flour, baking power, baking soda, salt, cinnamon, cloves, orange peel and mix well; add nuts and mix well.

Step 4

Grease two bread pans and divide batter between them; bake at 350 degrees for 45-55 minutes or till done; cool 10 minutes and remove from pan and then cool another 15 minutes.

Step 5

Meanwhile, make the glaze in a small bowl adding just enough orange juice to desired spreading consistency; spread over warm loaf and cool for at least 45 min.

Step 6

Wrap and store in a cool place.

I made this around the holidays and it was very much enjoyed by our family. I did add 1 cup of walnuts because 1/2 cup just didn't seem enough to me! Absolutely loved the orange flavor, and the loaf was moist and nutty. Just how we like it! I had cream cheese to spread on it, but it was delicious just by itself. I plan to make some mini loaves tomorrow so my dh and I can enjoy it for Easter!

Baking Babe Bev

With lots of fresh zucchini I had to use them up. This is one delicious bread and one I will make again. So moist and loved the hint of orange. I added extra nuts because it always makes everything better. I froze one and had it this week. Freezes well.
