Ingredients

The ingredients are:
  • 4 eggs
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 2/3 cup orange juice
  • 2 cups shredded unpeeled zucchini
  • 3 1/4 cups white flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 2 teaspoons grated orange peel
  • 1/2 cup chopped walnuts
  • Glaze:
  • 1 cup powdered sugar
  • 2-3 teaspoons orange juice

How to Make

  • Step 1: In a large bowl beat eggs till thick and lemon-colored; gradually beat in sugar.

  • Step 2: Stir in oil, 2/3 cup orange, and zucchini until well-blended.

  • Step 3: Add flour, baking power, baking soda, salt, cinnamon, cloves, orange peel and mix well; add nuts and mix well.

  • Step 4: Grease two bread pans and divide batter between them; bake at 350 degrees for 45-55 minutes or till done; cool 10 minutes and remove from pan and then cool another 15 minutes.

  • Step 5: Meanwhile, make the glaze in a small bowl adding just enough orange juice to desired spreading consistency; spread over warm loaf and cool for at least 45 min.

  • Step 6: Wrap and store in a cool place.
