Step by Step Method

Step 1

In large bowl, combine the flours, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

Step 2

Press liquid from the zucchini.

Step 3

In medium bowl, mix together the egg white, whole egg, oil, zucchini, and vanilla.

Step 4

Add this mixture to the flour mixture, stirring ingredients to combine well.

Step 5

Stir in the nuts and/or raisins, if desired.

Step 6

Pour batter into greased 9"x5"x3" loaf pan.

Step 7

Bake in preheated 350' F. oven 50-60 minutes or until a toothpick (or spaghetti strand) inserted in center of loaf comes out clean.

What a delightful zucchini bread! Used pecans and sultanas. It took 45 minutes to bake in my countertop oven which was perfect. Served it with tea and butter on the side. DH was a very happy man! Thank you for sharing your recipe! Will be made again!
