Ingredients

The ingredients are:
  • 3/4 cup whole wheat flour
  • 3/4 cup flour (unbleached white flour)
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 egg white
  • 1 egg, whole
  • 6 tablespoons oil (vegetable oil)
  • 1 1/4 cups zucchini, finely grated (unpeeled, packed = 1-3 medium zucchini or 15 ounces zucchini)
  • 1 teaspoon vanilla
  • 1/2 cup nuts, finely chopped (optional)
  • 1/3 cup raisins (optional)

How to Make

  • Step 1: In large bowl, combine the flours, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

  • Step 2: Press liquid from the zucchini.

  • Step 3: In medium bowl, mix together the egg white, whole egg, oil, zucchini, and vanilla.

  • Step 4: Add this mixture to the flour mixture, stirring ingredients to combine well.

  • Step 5: Stir in the nuts and/or raisins, if desired.

  • Step 6: Pour batter into greased 9"x5"x3" loaf pan.

  • Step 7: Bake in preheated 350' F. oven 50-60 minutes or until a toothpick (or spaghetti strand) inserted in center of loaf comes out clean.
