Step 1: In large bowl, combine the flours, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
Step 2: Press liquid from the zucchini.
Step 3: In medium bowl, mix together the egg white, whole egg, oil, zucchini, and vanilla.
Step 4: Add this mixture to the flour mixture, stirring ingredients to combine well.
Step 5: Stir in the nuts and/or raisins, if desired.
Step 6: Pour batter into greased 9"x5"x3" loaf pan.
Step 7: Bake in preheated 350' F. oven 50-60 minutes or until a toothpick (or spaghetti strand) inserted in center of loaf comes out clean.
