Soak beans covered in water overnight

Add water when beans start to boil ,add seasoning

Meanwhile in large skillet heat oil

Add everything but tomatoes

And lightly brown them

Cover and simmer 2 hours adding water if needed stirring occasionally

So I cheated to make these delicious beans. I forgot to soak the beans, and instead of changing dinner plans I just adapted. Used two cans of pinto beans (for a half recipe) and simmered them for 10 minutes with the spices, then continued from there, but cooking for just 10 mintutes after adding the veggies. These beans are FANTASTIC and are in my Best of 2022 file. Just the right amount of heat, and oh-so-tasty! I did have to add bit more salt though (and I'm not a salty person at all). Regardless, these are a 10 in my book!
