The curry oil can be made way ahead, but at least 1 day in advance to help develop the flavors. Note that the prep. time does not include the sitting around time for the curry oil."

Step by Step Method

Curry Oil


Step 1

Place the curry powder in a mixing bowl. Stir in a teaspoon at a time of the oil until the oil uniformly darkens and the mixture is the consistency of of a crumbly paste. Add the remaining oil, stir well, and transfer to a mason-type of jar. Seal the jar and let sit for 8 hours. This will keep to about 1 month in a cool, dry place.

Step 2

Move an oven shelf to the top level and preheat the oven to 400-degrees F. Mix together the wasabi, honey, butter, panko, and salt and pepper. Place the fish on a buttered baking rack on a baking sheet. Press the panko mixture onto the surface of the fish. Bake on the top rack of the oven until the fish is just cooked through, about 12 - 15 minutes. The timing depends entirely on the thickness of the cod fish and your oven. DO NOT overcook. The fish is done when it springs back upon gentle pressing. Place fish on a serving platter or individual plates. Drizzle the curry oil on or around the fish.

I made this using gluten free Kinnikinnick panko then followed instructions as listed. I did have to cook my fish a bit longer as they were thick pieces. This turned out so delicious . I just loved the crust on the fish. Thx for sharing your recipe here.

This is so good! I halved the recipe which worked out great for the three of us. Just served with a tossed salad for a very easy and delicious dinner. Thanks for sharing!

This wasn't too spicy for me at all. I don't like spicy food. I also think the curry flavored oil made it great. The different flavors went really well together. I'm glad I tried this. I made it for For Your Consideration on Food Friends and Fun.

Wow - the honey/wasabi crust was crunchy and delicious! I think the fish straight out of the oven was great, and the curry oil takes it over the top. The cod at the grocery didn't look good, so I used grouper instead. Otherwise, followed recipe exactly. Even though there's a lot of wasabi in the crust, it's not overly spicy - as the honey and panko temper it quite a bit. Thanks for sharing - this is definitely a keeper!
