"This is a fantastic side dish, but also makes a fantastic salad as well. And, it's healthy! The orange fennel relish is such a great addition to this and really makes the dish. Serve this as is; or serve over a bed of spinach or arugula for a great side salad. I love to use a mix of red and yellow or golden beets; but use what is available and market fresh."

Step by Step Method

Step 1

Vinaigrette ... Make the vinaigrette first so it has time to rest and develop flavor. In a small mixing bowl, or personally -- I like a small tupperware container, just add everything and shake. Add the marmalade, vinegar, garlic, olive oil, chives, salt and pepper; mix well - refrigerate until ready to use. It is even better made a few hours ahead, but it isn't necessary.

Step 2

Beets ... Rinse the beets well and brush any dirt off. Add them to a sheet of foil and drizzle with olive oil and season with salt and pepper. Fold up like a package. Place on a sheet pan and bake in the oven at 400 degrees for 40-50 minutes until tender - but NOT falling apart. They will be tossed with a warm vinaigrette, so you don't want them too soft. Transfer to a bowl and cover to keep warm, but cool slightly - just until they are cool enough to handle. NOTE: Cooking times can vary - insert a knife to check. The beets could easily be made ahead of time, and just reheated slightly in the microwave before serving. They are to be served warm. NOT hot, they would reheat very well.

Step 3

Relish -- As the beets cook, make the relish. In a small bowl, add the oranges, fennel, onion, orange juice, olive oil, red pepper flakes, thyme, salt, and pepper; mix well, cover and refrigerate until ready to serve.. Mix well, cover and refrigerate until ready to serve.

Step 4

Beets and Vinaigrette ... Peel the beets, thick slice, and add to a serving bowl. Remove the vinaigrette from the refrigerator and microwave 1 minute on medium high heat just to warm it up. You don't want it boiling, but you do want it nice and warm. Add about half of the vinaigrette and toss, being careful to not break up the beets. Continue to add as much vinaigrette as you like. If serving the beets over a bed of gens, a little extra dressing is fantastic. It is just up to you how much dressing you like.

Step 5

Finish and Serve ... Top with the Orange Fennel Relish and serve as a side dish; or plate over a bed or spinach or arugula ENJOY! Perfect with grilled seafood, lamb, or chicken.
