"A copycat from the Massachusetts restaurant. Also helps to soak the orzo in water, then add to the soup at the end, then turn off the heat and let it continue to cook. The orzo always stuck to the bottom of the pan time after time. After doing this it never happened again. This is a combo of all the recipes I found."

Step by Step Method

Step 1

Soak orzo in hot water and let set until last 10 minutes of cooking.

Step 2

Saute onions and garliciIn oil and add tomato paste.

Step 3

Add water and rest of ingredients except hamburger and orzo and bring to a boil.

Step 4

Pinch ground beef in small pieces and add to the pot.

Step 5

Simmer for 30 minutes adding the soaked orzo last 10 minutes.

Step 6

Remove bay leaf.

Step 7

Season to taste.

Step 8

Top with parmesan cheese and serve.
