Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1/2 cup onion, minced
  • 1 teaspoon garlic, minced
  • 2 tablespoons tomato paste
  • 28 ounces crushed tomatoes (1 can)
  • 1 ounce onion soup mix (1 envelope)
  • 1 bay leaf
  • 1 teaspoon Worcestershire sauce
  • 15 ounces Veg-All, undrained (1 can)
  • 16 ounces frozen mixed vegetables (1 package)
  • 6 cups water
  • 2 teaspoons beef bouillon
  • 12 ounces V-8 juice (1 can)
  • 6 ounces mushrooms, undrained (1 can)
  • 1 tablespoon dried parsley flakes
  • 6 ounces dry orzo pasta (2/3 cup)
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper, to taste
  • Garnish
  • 4 ounces parmesan cheese

How to Make

  • Step 1: Soak orzo in hot water and let set until last 10 minutes of cooking.

  • Step 2: Saute onions and garliciIn oil and add tomato paste.

  • Step 3: Add water and rest of ingredients except hamburger and orzo and bring to a boil.

  • Step 4: Pinch ground beef in small pieces and add to the pot.

  • Step 5: Simmer for 30 minutes adding the soaked orzo last 10 minutes.

  • Step 6: Remove bay leaf.

  • Step 7: Season to taste.

  • Step 8: Top with parmesan cheese and serve.
