Step by Step Method
Step 1
Heat oil in a large sauté pan.
Step 2
Add onion and sauté until translucent.
Step 3
Add garlic, ginger, turmeric, cumin seeds and black pepper.
Step 4
Fry for about a minute until the spices and aromatics are fragrant.
Step 5
Stir through tomato paste and fry for another minute don't burn.
Step 6
Add vegetable broth, coconut milk and undrained butter beans and stir to combine.
Step 7
Bring to a simmer and turn the heat to medium low.
Step 8
Simmer for 15 minutes to thicken.
Step 9
Season to taste.
Step 10
Remove from the heat.
Step 11
Top with minced cilantro.
