Step by Step Method

Step 1

Heat oil in a large sauté pan.

Step 2

Add onion and sauté until translucent.

Step 3

Add garlic, ginger, turmeric, cumin seeds and black pepper.

Step 4

Fry for about a minute until the spices and aromatics are fragrant.

Step 5

Stir through tomato paste and fry for another minute don't burn.

Step 6

Add vegetable broth, coconut milk and undrained butter beans and stir to combine.

Step 7

Bring to a simmer and turn the heat to medium low.

Step 8

Simmer for 15 minutes to thicken.

Step 9

Season to taste.

Step 10

Remove from the heat.

Step 11

Top with minced cilantro.

Wow - just wow! This made for a terrific meatless meal, served over rice. The flavors create an explosion in your mouth making you come back for more! Must admit that I didn't think it would thicken up, based on how runny it was when all the liquids were added. But thicken up, it did, though it took about 20 minutes. As usual, I doubled the garlic and ginger - personal taste only - as I'm sure it was perfect as written. We'll have this again and again. Thanks for sharing, Dee!

I originally had this planned as a side, but it makes a fantastic vegan meal, excellent over rice. I increased the garlic and added a bit more of the tomato paste. So much flavor going on! Thank you, Dee, for sharing.
