Step 1: Heat oil in a large sauté pan.
Step 2: Add onion and sauté until translucent.
Step 3: Add garlic, ginger, turmeric, cumin seeds and black pepper.
Step 4: Fry for about a minute until the spices and aromatics are fragrant.
Step 5: Stir through tomato paste and fry for another minute don't burn.
Step 6: Add vegetable broth, coconut milk and undrained butter beans and stir to combine.
Step 7: Bring to a simmer and turn the heat to medium low.
Step 8: Simmer for 15 minutes to thicken.
Step 9: Season to taste.
Step 10: Remove from the heat.
Step 11: Top with minced cilantro.
