  • 1 teaspoon turmeric
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon black pepper, to taste
  • 1 tablespoon tomato paste
  • 30 ounces butter beans (2 cans)
  • 1 cup full fat coconut milk
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • Garnish
  • 1 tablespoon cilantro, minced

How to Make

  • Step 1: Heat oil in a large sauté pan.

  • Step 2: Add onion and sauté until translucent.

  • Step 3: Add garlic, ginger, turmeric, cumin seeds and black pepper.

  • Step 4: Fry for about a minute until the spices and aromatics are fragrant.

  • Step 5: Stir through tomato paste and fry for another minute don't burn.

  • Step 6: Add vegetable broth, coconut milk and undrained butter beans and stir to combine.

  • Step 7: Bring to a simmer and turn the heat to medium low.

  • Step 8: Simmer for 15 minutes to thicken.

  • Step 9: Season to taste.

  • Step 10: Remove from the heat.

  • Step 11: Top with minced cilantro.
