Step by Step Method

Step 1

Put the peaches, lemon juice and 2 cups sugar in a heavy bottomed pot or dutch oven.

Slice vanilla bean in half lengthwise. Use the flat side of a knife scrape out the seeds and place in the pot along with the empty pod halves. Bring to a boil, then reduce to simmer. If using, add the Bourbon. I’ve made it both ways and it is delicious with or without. The Bourbon serves to enhance the flavor of the vanilla, much like adding coffee or espresso to chocolate recipes. Simmer for about 1 1/2 hours. Stirring occasionally. The peaches will turn a golden, caramelized orange color.

Step 3

Allow to cool slightly and ladle into jelly jars (discarding bean pods). When cooled completely store in the refrigerator. It will continue thickening as it cools.

I will admit I am not an experienced jam maker. I followed the directions to a T. But I don't believe this is supposed to be a jam that isn't supposed to be heated up first. I was wondering why it only had 4 servings. Now I know. This morning my husband got out a spoon to use for toast. It was hard as a rock. It's like a hard candy. Not jam. I feel the title should not say jam. He heated up a little bit so we could taste it and it has a great flavor, though! This should be used as a syrup.
