Ingredients

The ingredients are:
  • 16 spears asparagus, medium sized, ends snapped
  • 1 1/2 cups grape tomatoes, cut in half
  • 3 tablespoon pine nuts,
  • Olive oil (spray of)
  • 3 garlic cloves, mashed
  • Salt and pepper to taste
  • 1/3 cup parmesan cheese, grated
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons lemon peel grated

How to Make

  • Step 1: Place your prepared asparagus on a foil lined baking sheet, single layer.

  • Step 2: Add tomatoes, pine nuts, salt & pepper.

  • Step 3: Lightly spray with olive oil

  • Step 4: Bake in pre heated 450 oven for 7 minutes.

  • Step 5: Sprinkle on the parmesan cheese and lemon peel

  • Step 6: Return to oven and continue roasting for an additional 3 minutes or until the asparagus is done to your liking.
