"This is the ultimate Turkey and Cranberry sandwich after Thanksgiving. I get requests year after year to make this. And it is NOT difficult, but the biscuits are the key. A simple mix of a canned cranberry sauce with toasted walnuts, leftover turkey, brie cheese; and then the simple Bisquick sweet potato rolls. It is absolutely sinful. My favorite meal is this sandwich with a bowl of a apple chestnut soup, maybe a salad mix of butter lettuce with blue cheese and roasted pears. It doesn't get much better. The recipe makes about 8 rolls, so why not make 8 sandwiches, they are not too big, so hungry guys, may want 2 or 3 of these. These can be made smaller as great appetizers, lunch or dinner."

Step by Step Method

Step 1

Potatoes ... I make this the easy way, and just cook them right in the microwave. Six (7)-10 minutes on high until tender and soft. Let them cool; cut in half and scoop out the flesh. You need 1 cup. Mash them up well.

Step 2

Walnuts and Cranberry Sauce ... To a baking sheet lined with parchment paper, add the walnuts and bake in a 400 degree oven for 5 minutes or until you begin to smell the nuts and they will get toasty brown. Remove, cool and rough chop. Add to the cranberry sauce. Chill until ready to use.

Step 3

Biscuits ... In a medium size bowl, add the butter, sweet potato, milk and allspice. Mix well. Then add in the baking mix and mix to combine. Roll out on a surface lightly dusted with additional Bisquick (I roll mine out right on a sheet of parchment paper) and roll to about 1/4" thick. Using a 2 1/2" biscuit cutter, cut into biscuits.

Step 4

Bake ... In a 450 degree oven on the middle shelf, on the same pan you baked the walnuts on, lined with parchment paper or foil for easy clean up; add the biscuits and bake 15-20 until golden brown. Just keep an eye on them.

Step 5

Turkey and Brie ... Again, on the same pan you cooked the biscuits on ... add the turkey in 8 small piles - 2 slices per pile (make the piles the size of the biscuits.) Top each pile with 2 slices of cheese. Bake 5 minutes just until the cheese melts and the turkey warms up. The turkey doesn't have to be HOT, just the cheese melted.

Step 6

Sandwich ... Spread a little cranberry walnut sauce to the bottom biscuit. Top with the turkey and melted cheese and finish with another spoon of the cranberry sauce and top with the other half of the biscuit.

Step 7

Serve ... ENJOY! As I said, a bowl of apple chestnut soup is fantastic; and a salad with buttery greens, roasted pears and blue cheese makes a perfect dinner as far as I am concerned. Delicious!!
