"For me, a sandwich with either a soup or salad make a fantastic dinner; especially during the hot summer months. But sandwiches can be boring - turkey, cheese, lettuce, tomato, etc. I love to create unique sandwiches that - literally you can entertain with. Invite quests over for a game or movie night and serve sandwiches, soup and salads - it makes for a fun, easy, and inexpensive evening. A creamy potato or celery soup are my favorites to serve with this; or a nice warm spinach salad would be fantastic. The recipe for the peach mayo makes more than enough; but left over can be used in many ways. Serve as a dip for fried/grilled shrimp or chicken fingers, spread on chicken or fish and then bake; and, try adding a dash of siracha to it, and it makes a fantastic dip for onion rings."

Step by Step Method
Step 1
Peach Mayo ... In a small food processor, puree the peaches until smooth. Add to the mayo, honey, thyme, and season with salt and pepper. Refrigerate until ready to use. It is best made at least an hour before you use it.
Step 2
Sandwich ... First thing - Take out the turkey to take the chill off.
Step 3
Top the first slice of bread with a little of the peach mayo, couple of thin slices of cheese, turkey, a couple of onions rings, pears, another couple of slices of cheese. And finish it off with the top slice of bread with the peach mayo.
Step 4
Grill ... Very lightly butter the top slice of bread and place - buttered side down on the grill or griddle. Then butter the top side once again. Place a sheet of foil or lid to a pot over the sandwich and let it cook on medium heat until golden brown. Then flip and cook until the cheese is melted. Don't cook at too high of heat - the bread will brown before the cheese is melted.
Step 5
Serve ... Cool just a minute, slice and ENJOY!! To make it 'fancy' ... Take a tooth pic and put it through a peach slice on each sandwich half.
