Step by Step Method
Step 1
Blend milk, flour, eggs, sugar, vanilla and zests in a food processor or blender.

Process until smooth. (Or whisk by hand)

Place butter in 10 inch pie plate or cast iron skillet and let melt in 400ºF oven. (12 inch skillet if you double recipe)

Swirl pan to evenly spread butter.

Pour batter into pan and bake for 15 minutes.

Lower heat to 350ºF and bake for another 15 minutes, until pancake is golden brown and nicely puffed.
Step 7
Either slide pancake onto platter, or keep in pan and spread with optional mascarpone or lemon curd and sprinkle on powdered sugar.
Step 8
Scatter the berries on top and serve immediately or let people add toppings as desired.
