Step 1: Blend milk, flour, eggs, sugar, vanilla and zests in a food processor or blender.
Step 2: Process until smooth. (Or whisk by hand)
Step 3: Place butter in 10 inch pie plate or cast iron skillet and let melt in 400ºF oven. (12 inch skillet if you double recipe)
Step 4: Swirl pan to evenly spread butter.
Step 5: Pour batter into pan and bake for 15 minutes.
Step 6: Lower heat to 350ºF and bake for another 15 minutes, until pancake is golden brown and nicely puffed.
Step 7: Either slide pancake onto platter, or keep in pan and spread with optional mascarpone or lemon curd and sprinkle on powdered sugar.
Step 8: Scatter the berries on top and serve immediately or let people add toppings as desired.
