Ingredients

The ingredients are:
  • 1/4 - 1/3 cup milk
  • 1/4 - 1/3 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons sugar (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 2 tablespoons unsalted butter
  • 2 tablespoons mascarpone cheese or lemon curd (optional, to serve)
  • 1 teaspoon powdered sugar
  • 2 cups strawberries (fresh berries: sliced strawberries, blueberries, raspberries, etc)

How to Make

  • Step 1: Blend milk, flour, eggs, sugar, vanilla and zests in a food processor or blender.

  • Step 2: Process until smooth. (Or whisk by hand)

  • Step 3: Place butter in 10 inch pie plate or cast iron skillet and let melt in 400ºF oven. (12 inch skillet if you double recipe)

  • Step 4: Swirl pan to evenly spread butter.

  • Step 5: Pour batter into pan and bake for 15 minutes.

  • Step 6: Lower heat to 350ºF and bake for another 15 minutes, until pancake is golden brown and nicely puffed.

  • Step 7: Either slide pancake onto platter, or keep in pan and spread with optional mascarpone or lemon curd and sprinkle on powdered sugar.

  • Step 8: Scatter the berries on top and serve immediately or let people add toppings as desired.
