"A lovely pancake for 2, German pancakes are what my mom called them, but they are also known as Dutch Babies. By whatever name, they are delicious and look impressive!"

Step 1

Blend milk, flour, eggs, sugar, vanilla and zests in a food processor or blender.

Step 2

Process until smooth. (Or whisk by hand)

Step 3

Place butter in 10 inch pie plate or cast iron skillet and let melt in oven. (12 inch skillet if you double recipe)

Step 4

Swirl pan to evenly spread butter.

Step 5

Pour batter into pan and bake for 15 minutes.

Step 6

Lower heat to 350ºF and bake for another 15 minutes, until pancake is golden brown and nicely puffed.

Step 7

Either slide pancake onto platter, or keep in pan and spread with optional mascarpone and sprinkle on powdered sugar.

Step 8

Scatter the berries on top and serve immediately or let people add toppings as desired.

5 stars all day, everyday gf. I love Dutch babies and this one certainly does not disappoint. It was wonderful, full of flavor, orange, lemon and vanilla, topped with fruit, simply perfection. Thank you for sharing a new favorite that I will enjoy often. I scaled this down for one, it was so easy and worked perfectly. Just stirred in by hand, so very delicious, wish I would have made the whole recipe now... happily made for Alphabet Tag.
