Tiny Pancakes
"I've been reading a cookbook by Mark Bittman on using all kinds of ingredients to embellish a basic dish. This was his take on using leftovers to jazz up tiny pancakes. Each group of add-ins to the basic recipe should make 8 tiny pancakes! PS The ones in the photos were made with leftover tater tots and bacon bits. Garnished with shredded cheddar and a drizzle of green taco sauce. It made 6 tiny pancakes."

Step by Step Method
Step 1
Beat the egg, water and flour.
Step 2
Season with salt and pepper (or sugar for sweet add-ins)
Step 3
Mix together your choice of suggested add-ins or your own concoction.
Step 4
Stir into egg mixture.
Step 5
Heat olive oil or butter in a large skillet, so it very generously covers the pan.
Step 6
Spoon in 8 tiny pancakes and cook. Turn once and cook so both sides look golden.
