"Just 6 ingredients, salt and pepper. This recipe has NO cheese, but to me, it is just as good. Only 1/2 cup heavy cream is all that is needed, and it is so it is much healthier per serving - and it only takes 10 minutes. I love the richness of some of the creamed spinach dishes, but if I can avoid some of the calories and still have a delicious creamed spinach, I'll take it. I was cooking a dinner party at a friends house and realized I had no creamed cheese, so this is the recipe I resorted to. Everyone loved it so much, this is the only way I now make creamed spinach. And if possible, please use fresh nutmeg, it is definitely worth it. Adding garlic also adds a nice flavor if you want to add that - it is optional."

Step by Step Method

Step 1

Spinach ... I prefer to thaw mine over a strainer so you get as much water out as possible. Once it has thawed, squeeze it dry.

Step 2

Base ... Add the butter to a medium size sauce pan, preferably non-stick, and bring to medium high heat. Add the shallots and cook just a minute or two; then add in the spinach breaking it up as it cooks. Cook 2-3 minutes until it is heated through and combined with the onions and butter. Add the cream, nutmeg and season with salt and pepper. Reduce the heat to medium low and simmer approximately 5-7 minutes until the cream reduces and thickens.

Step 3

Serve ... Just ENJOY! It is a simple easy dish to make
