Step 1

TO MAKE THE MAYONNAISE - heat a small fry pan over high heat and cook chillies stirring for 5 to 10 minutes or until charred and then discard stalks and roughly chop.

Step 2

Place chillies, garlic, sugar, lime zest and juice, coriander and sou sauce into the bowl of a small food processor and process for 1 to 2 minutes or until finely chopped.

Step 3

Stir through mayonnaise and serve with buckets of prawns on ice.

Daily Inspiration

Made this tasty dipping sauce today to go with some oven-roasted shrimp. I made a few minor changes -- used less chili (1 jalapeno less membrane and seeds), and little less cilantro. Otherwise, I made as directed and it turned out really well.
