Ingredients

The ingredients are:
  • 1 kilogram shrimp (peeled and deveined, tails left on, 24 cooked)
  • FOR GREEN CHILLI MAYONNAISE
  • 2 green chillies (long chilli)
  • 1 tablespoon chopped ginger root (peeled)
  • 2 cloves garlic (roughly chopped)
  • 1 tablespoon brown sugar
  • 1 lime, whole (zest and juice of)
  • 1 cup coriander leaves
  • 1 tablespoon soy sauce
  • 1 cup mayonnaise

How to Make

  • Step 1: TO MAKE THE MAYONNAISE - heat a small fry pan over high heat and cook chillies stirring for 5 to 10 minutes or until charred and then discard stalks and roughly chop.

  • Step 2: Place chillies, garlic, sugar, lime zest and juice, coriander and sou sauce into the bowl of a small food processor and process for 1 to 2 minutes or until finely chopped.

  • Step 3: Stir through mayonnaise and serve with buckets of prawns on ice.
