Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

In bowl, mix brown sugar and flour.

Step 3

In separate bowl, whisk together milk, eggs and vanilla.

Step 4

Gradually add to flour mixture mixing well.

Step 5

Place cookie sheet under pie crust.

Step 6

Fill pie crust with mixture.

Step 7

Drop cold butter cubes throughout mixture

Step 8

Cook for 45 to 50 minutes, until outside edges are firm and center is slightly jelly like.

This wasn't nearly as sweet as I feared, but it was certainly plenty sweet enough that we wished we'd cut it into smaller pieces. Not that anyone left any on their plates, we just felt guilty about it! I did have two problems: When it came out of the oven there was a lake of melted butter on top that never incorporated so I eventually had to soak it up with some paper towel. I also had to bake it about 20 minutes longer than it said since the middle was still liquid. I also think next time I'll let the filling stand for a bit before baking to let the sugar completely dissolve, as it was a little grainy for our taste. Definitely a tasty pie, though, and I'm glad I finally had an occasion to make it!

Engrossed

OUTSTANDING!!! This is so freakin' DELICIOUS!!! Amazing how something so simple can be sooooo good! And yes it did satisfy my sweet tooth. It is basically a brown sugar custard pie and reminds me of a mix of old-fashioned buttermilk raisin pie and pecan pie, but I like it better than both! Hubby says he wants to move to Canada now, and he wants this pie on his Birthday. I'm not a milk drinker, so I enjoyed mine with mounds of whipped cream YUM! To make this lighter, I used half coconut sugar and fat-free evaporated milk. I am inspired now to also try a crustless version with all coconut sugar, coconut milk, and coconut oil. See we don't think all Canadian food is weird LOL. Thanks for this keeper of recipe Bea! Made for the Billboard recipe tag game.
