Step by Step Method
Step 1
Finely chop the walnuts in a blender or food processor. Set aside 1/2 teaspon of the walnuts for garnish. Add the breadcrumbs, garlic, vinegar, and 3 tablespoons water to the rest and blend well.
Step 2
With the motor running, gradually add the olive oil in a thin steady stream until smooth. Add a little more water if the sauce appears too thick. Season to taste, then transfer to a serving bowl and refrigerate.
Step 3
Combine the reserved walnuts with the parsley and sprinkle on top before serving.
Note: This can be made with almonds, hazelnuts, or pine nuts instead of the walnuts. Lemon juice can be used as a substitute for the vinegar.
