Step 1: Finely chop the walnuts in a blender or food processor. Set aside 1/2 teaspon of the walnuts for garnish. Add the breadcrumbs, garlic, vinegar, and 3 tablespoons water to the rest and blend well.
Step 2: With the motor running, gradually add the olive oil in a thin steady stream until smooth. Add a little more water if the sauce appears too thick. Season to taste, then transfer to a serving bowl and refrigerate.
Step 3: Combine the reserved walnuts with the parsley and sprinkle on top before serving.
