Ingredients

The ingredients are:
  • 8 ounces walnuts, shelled
  • 2 3/4 ounces breadcrumbs (1 cup soft, white)
  • 3 cloves garlic (or more!)
  • 1/4 cup white wine vinegar
  • 1 cup olive oil
  • 1 tablespoon flat-leaf parsley (fresh, chopped, for garnish)

How to Make

  • Step 1: Finely chop the walnuts in a blender or food processor. Set aside 1/2 teaspon of the walnuts for garnish. Add the breadcrumbs, garlic, vinegar, and 3 tablespoons water to the rest and blend well.

  • Step 2: With the motor running, gradually add the olive oil in a thin steady stream until smooth. Add a little more water if the sauce appears too thick. Season to taste, then transfer to a serving bowl and refrigerate.

  • Step 3: Combine the reserved walnuts with the parsley and sprinkle on top before serving.

  • Note: This can be made with almonds, hazelnuts, or pine nuts instead of the walnuts. Lemon juice can be used as a substitute for the vinegar.
