Step by Step Method

Step 1

Trim fat from meal and then thinly slice across the grain into bite-size strips and set aside.

Step 2

In a skillet or wok over medium high heat heat 2 teaspoons of the oil and then add the ginger cooking and stirring for 15 seconds. Add broccoli and bell pepper strips and cook stirring another 4 minutes or until crisp-tender. Remove vegetables from wok.

Step 3

Add the remaining 2 teaspoons of oil to wok and add beef and edamame and cook stirring over medium high heat for 2 minutes or until beef is desired doneness. Return vegetables to wok.

Step 4

In a small cup or bowl stir together the hoisin sauce, vinegar and chili paste. Add to beef mixture, tossing to coat and heat through.

Step 5

Serve over rice.

This was sweet and spicy...I used red bell peppers so that added and extra touch of sweetness...next time I plan on increasing the red chili paste...we like the heat...make sure you have all your ingredients close by and ready to use...the recipe comes together quickly...it's easy to prepare and very filling...I cut the recipe in half and it worked great...it also turned out low in WW points...made for "Only the Lonely" tag game...
