Step by Step Method
Step 1
Combine eggs, milk and olive oil in a small bowl.
Step 2
Place flour in a large bowl.
Step 3
Slowly stir in egg mixture to make a smooth batter.
Step 4
Add sweet potatoes, onions, and thyme.
Step 5
Mix well.
Step 6
Heat a small amount of oil in a skillet until hot but not smoking.
Step 7
Place a small ladleful of pancake mixture in the skillet and press to flatten.
Step 8
Repeat until skillet is full.
Step 9
Fry until golden brown on both sides, about 2 minutes per side.
Step 10
Drain on paper towels.
Step 11
Repeat with remaining batter.
Step 12
Makes 16 pancakes.
