Step by Step Method

Step 1

Place grated sweet potato and onion in a large sieve. Drain off excess moisture and squeeze dry.

Step 2

In a large bowl, combine sweet potatoes and onion with egg, flour, salt and pepper.

Step 3

In a large skillet, heat 2 tablespoons of the oil over medium heat. Working in batches, scoop 1 1/2 teaspoons vegetable mixture into your hand and form into a small patty.

Step 4

Slip patty into hot oil and brown one side, 2 to 3 minutes. Turn and cook the other side until golden, about 2 minutes more. Repeat with remaining vegetable mixture, adding more oil to pan as needed.

Step 5

Place latkes on prepared baking sheet loosely covered with foil and keep warm in preheated oven.

Step 6

Before serving, top latkes with a small spoonful of Caramelized Onions and top with cheese. A tiny piece of a sprig of thyme is the finishing touch.

Caramelized Onions


Step 7

In a large skillet, heat 4 tablespoons of the olive oil over medium-high heat. Add onions and stir until evenly colored, 8 - 10 minutes.

Step 8

Tie thyme, parsley and bay leaf together with butcher's string and add to onions with garlic, salt and pepper. Reduce heat to low and continue to cook, stirring occasionally, until onions are soft and a rich caramel color, 8 - 10 minutes. Discard herb bundle. Taste and adjust seasoning.

Step 9

Add a splash of balsamic vinegar, if desired.

Stunningly wonderful! Made as directed with the exception that I did not use any salt as the cheese I used (Asiago) was enough for us. Would have loved to use the Stilton as I think it would have added more punch, but DH does not like. The onions on top were perfect. Definitely a recipe that will see many repeats! Daily Inspiration

Loved these sweet potato latkes -- easy to make with a nice flavor. I made the caramelized onions earlier in the day and just reheated them. They were really tasty on top of the latkes. We tried the stilton, but decided not to add it. These latkes went so well with crab cakes and a salad.

Amazing! What a difference between a potato latke and these sweet potato latke's. I loved the combo of the sweet onions (I used Vidalia's) caramelized with balsamic, the Stilton, and the sweet potato patties. They were the perfect vehicle for the onions! I would make this again and again. Quick and easy! Thanks for posting- made for SWT 2019 - The Traveling Tastebuds. Sorry for the pic - we realized at the dinner table that we left off the Stilton and didn't add it till the first few bites were gone!
