Step 1: Place grated sweet potato and onion in a large sieve. Drain off excess moisture and squeeze dry.
Step 2: In a large bowl, combine sweet potatoes and onion with egg, flour, salt and pepper.
Step 3: In a large skillet, heat 2 tablespoons of the oil over medium heat. Working in batches, scoop 1 1/2 teaspoons vegetable mixture into your hand and form into a small patty.
Step 4: Slip patty into hot oil and brown one side, 2 to 3 minutes. Turn and cook the other side until golden, about 2 minutes more. Repeat with remaining vegetable mixture, adding more oil to pan as needed.
Step 5: Place latkes on prepared baking sheet loosely covered with foil and keep warm in preheated oven.
Step 6: Before serving, top latkes with a small spoonful of Caramelized Onions and top with cheese. A tiny piece of a sprig of thyme is the finishing touch.
Step 7: In a large skillet, heat 4 tablespoons of the olive oil over medium-high heat. Add onions and stir until evenly colored, 8 - 10 minutes.
Step 8: Tie thyme, parsley and bay leaf together with butcher's string and add to onions with garlic, salt and pepper. Reduce heat to low and continue to cook, stirring occasionally, until onions are soft and a rich caramel color, 8 - 10 minutes. Discard herb bundle. Taste and adjust seasoning.
Step 9: Add a splash of balsamic vinegar, if desired.
