Step by Step Method
Step 1
Preheat oven to 240C (475F).
Step 2
Place the sweet potato, oil, garlic, salt and pepper on a big oven tray and toss to combine and cook, stirring hallway, for 12 to 15 mnutes or until tender and golden.
Step 3
Place the pita bread on 2 big oven tray, spread with the labne and to with the sweet, potato, oregano and goat's cheese and cook for 8 to 10 minutes or until golden and crisp.
Step 4
Drizzle with the extra oil and top with the kale, salt and pepper to serve.
