Ingredients

The ingredients are:
  • 800 grams sweet potato (peeled and cut into 1cm cubes)
  • 1 tablespoon olive oil (extra virgin olive oil, plus more for drizzling)
  • 1 garlic cloves, minced
  • Sea salt
  • Cracked black pepper
  • 200 grams pita bread (2 big whole wheat pita breads)
  • 210 grams labne (yoghurt cheese, 3/4 cup)
  • 6 sprigs oregano
  • 80 grams goat cheese (soft and crumbled)
  • 80 grams kale (baby leaves)

How to Make

  • Step 1: Preheat oven to 240C (475F).

  • Step 2: Place the sweet potato, oil, garlic, salt and pepper on a big oven tray and toss to combine and cook, stirring hallway, for 12 to 15 mnutes or until tender and golden.

  • Step 3: Place the pita bread on 2 big oven tray, spread with the labne and to with the sweet, potato, oregano and goat's cheese and cook for 8 to 10 minutes or until golden and crisp.

  • Step 4: Drizzle with the extra oil and top with the kale, salt and pepper to serve.
