Sweet and Sour Caramelized Onions

"Now, these aren't the type of caramelized onions for onion soup. These are a great condiment - for burgers, hoagies, sandwiches, brats, sausages and hot dogs; or even over a grilled pork chop or added some grilled chicken. Sweet, sour, and tender - the perfect topping. Easy to prepare, but they do take a bit of patience - so, don't try to rush these."

Step by Step Method
Step 1
Onions ... Add the butter to a medium saute pan on medium heat. Add the onions, salt and brown sugar and cook on medium heat for 5 minutes. Don't let the onion brown or burn, and stir often. Then reduce the heat to medium low and cook low and slow for 30-40 minutes until the onions are a deep brown caramel color.
Step 2
Finish ... The last minute of cooking, add in the cider vinegar and season with pepper if you want. ENJOY!

Note: They last a good week or longer in a mason jar or tupperware type of container in the refrigerator. I have frozen them as well. The texture does change a bit; but, still quite good.
